Ingredients For semi-homemade slow cooker chicken posole

  • 1 can
    yellow or white hominy, drained (15 oz)
  • 1 can
    mexican-style diced tomatoes (14.5 oz)
  • 1 can
    geen enchilada sauce-mild (10 oz)
  • 2 stick
    carrots, diced
  • 1 md
    onion, chopped
  • 3 clove
    garlic, minced
  • 2 tsp
    cumin
  • 1 1/2 lb
    chicken, skinless-boneless, cubed
  • 1 bunch
    cilantro (optional)
  • 2 md
    lime wedges (optional)
  • 1 lg
    tortilla chips bag or homemade (optional)

How To Make semi-homemade slow cooker chicken posole

    Combine hominy, tomatoes, enchilada sauce, carrots, onion, garlic and cumin in slow cooker.

    Add chicken and stir to combine. cover and cook on low 3 to 3 1/2 hours until chicken is cooked through and vegetables are tender.

    Stir in cilantro if you desire to use it. You may serve with lime wedges and tortilla chips.
