- whole wheat tortillas
- onions, vidalia, peeled and chopped
- 4 c
- cooked plain shrimp
- 1 1/2 c
- cheese, shredded cheddar
- 2 Tbsp
- peanut oil
1Saute onions. Layer one side of each tortilla with cheese, chopped onion, chopped shrimp, top with another layer of cheese.
2Fold tortilla and lightly brown each side. Place on paper towel to drain.
3Serve with guacamole, sour cream and salsa of your choice
