Ingredients

**corn tortillas
**roasted tomatoes
**fresh cilantro
**fresh sliced onion
**mexican cheese (asadero)
**thai garlic paste

Directions Step-By-Step

Pan or oven roast tomatoes.

Place one corn tortilla in hot skillet and spread Thai sauce on.

Then add cheese, roasted tomatoes, onion and allow tortilla to get good and hot and cheese melt.

Top with fresh cilantro and enjoy. You can also add some sauteed portabello slices, it's just delicious!!!
