Poodle's Nachos Supreme (vegetarian)
A BIG snack or a lighter dinner

1I just saute up some chopped onions in olive oil, toss in some canned diced green chilies, a big can of Rosarita vegetarian re-fried beans, a little taco seasoning mix and a splash of water, a pinch of sugar and heat through.
Then I place some tortilla chips on a plate, add the beans and top with lettuce, tomatoes, sliced olives, green onions, shredded cheddar and/or Monterey jack cheese, then top it off with light sour cream (and salsa if you like it.)
You can add ground beef, of course, but we prefer to keep our meals vegetarian.
