Ingredients For mexican scrambled eggs

    tortillas
  • 1
    green pepper, chopped
  • 1
    hot pepper, seeded and chopped
  • 2-3
    spring onions, chopped
  • 1
    tomato, seeded and chopped
  • 5-6
    mushrooms, sliced or chopped
  • 4-5
    eggs, lightly beaten
  • shredded cheese, quantity and type to taste (i used cheddar)
  • refried beans
  • salsa
  • oil

How To Make mexican scrambled eggs

    In a frying pan, heat some oil. Roll the tortillas up, and cut with scissors into strips directly into the pan. Fry until crispy, then remove from pan.

    Add a little more oil, if necessary, and fry all the vegetables until tender.

    Mix the eggs with salt and pepper and add to pan along with some of the shredded cheese. When the eggs have been cooking a little bit, add the tortilla strips to the pan and continue cooking until the eggs are just at the consistency you like them.

    Serve with additional shredded cheese, refried beans, and salsa.
