Low Carb Mexican Bake

This recipe on has 18g of carbs. I used my chicken taco recipe to cook the chicken. I served this in a bowl with a little sour cream (2g of carbs). You could also eat it with a wheat tortilla (40g of carbs).

Ingredients

2-4
chicken breast filets
1 can(s)
diced tomatoes
1 can(s)
black beans
enough cheese to cover

Directions Step-By-Step

Cook chicken like you would do for tacos or burritos. I have a recipe on this site under "Chicken Tacos."

Drain all of the liquids from the cans and layer in a Pyrex dish in this order: Beans, tomatoes and chicken.

Cook covered on 400 degrees for 30 minutes.

Uncover and continue to cook until for 15 more minutes.

Add cheese let it sit until it melts.
