My kids loved it growning up, I love to make it because it is so quick and easy. And who doesn't like enchiladas??

Ingredients For enchilada casserole

1 lbground beef

salt to taste

1onion, yellow, medium chopped

1 cancream of chicken soup

1 cancream of mushroom soup
-
1 canenchilada sauce

1/2 lbmild cheddar cheese (grated)

1 pkgcorn tortillas
How To Make enchilada casserole

1Saute onion in 1 tablespoon oil, then brown meat in skillet.

2Mix: cream of chicken soup, cream of mushroom soup, and enchilada sauce

3Add meat to soup mixture. Grate 1/2 pound mild cheddar cheese. Break up package corn tortillas. Place 1/2 tortillas in baking dish, then 1/2 of meat mixture, and 1/2 of grated cheese. Repeat. Bake in 350 oven for 30 minutes.
