Easy Spanish Rice

This is my quick and easy version of Spanish Rice. I use it for a main course, but you can also use it as a side dish. Make it spicy or not.

Stove Top

Ingredients

2 Tbsp
olive oil
1 medium
onion, diced
2 clove
garlic, minced
1
green pepper, diced
1 c
basmati rice, rinsed and drained
1 pkg
morningstar farm® meal starters grillers® recipe crumbles™ (or if you desire, 1 lb ground beef, cooked and drained)
3 c
vegetable juice (such as v8®) or tomato juice
dash(es)
cayenne (to taste)
salt and pepper to taste

Directions Step-By-Step

Heat oil in large skillet. Add onion, garlic and green pepper and saute until tender.

Stir in rice. Cook for 2 minutes. Add Grillers (or ground beef), vegetable juice, cayenne and salt and pepper. Cover and cook until rice is tender and has absorbed the liquid-about 20 minutes. Stir occasionally.

Adjust seasoning, if necessary, and serve.
