This recipe has been in my box for years. I don't remember where it came from but I make it often.

Ingredients

2 c
cooked rice
2 c
sour cream
1/2 lb
shredded jack cheese
7 oz
diced green chilies
3 Tbsp
butter
1/4 c
grated parmesan cheese
salt to taste
cooked chicken (optional)

Step-By-Step

1Mix cooked rice with sour cream and salt. Spread 1/2 of the mixture in a 1.5 qt casserole dish.
2Sprinkle with jack cheese and chilies. Top with remaining rice mixture. Dot with butter and sprinkle with parmesean cheese. Bake at 350 for 30 minutes.
3Optional: You can add cooked chicken in the middle layer if you are making a main course.
