Bean & Cheese Quesadillas

I put these together tonight out of just wanting to use left overs and they turned out great.

Ingredients

1 c
or can black or pinto beans, cooked
1/2-1 can(s)
diced tomatoes
1 Tbsp
taco or chili seasoning
8 oz
shredded cheese of choice
8-10
flour tortillas

Step-By-Step

1Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)

2Spoon about 1/4 cup of mixture onto one tortilla.

3Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.
