Spaghetti in Rabbit Liver Sauce

Ingredients

1 lb
rabbit liver
2 medium
onions, sliced
2 Tbsp
tomato paste
1 1/2 c
tomato puree
1/4 lb
snap or snow peas
1 c
white wine
1 tsp
curry powder
2 clove
garlic
1
bay leaf
olive oil

Step-By-Step

1Heat some olive oil in a large skittle and add onions, whole garlic, bay leaf and diced rabbit liver.
2When the liver is well browned from all sides sprinkle the curry powder and add the cup of white wine.
3When the wine has reduced add the tomato paste followed by the tomato puree and mix well.
4Cover tightly and stew slowly till the sauce combines, or about 1 hour. Five minutes from the end, add the peas to the sauce.
5Traditionally this sauce is served with spaghetti however any other long pasta can be used.
