Ingredients

duck
6 oz
snap or snow peas
2 tsp
soy sauce
2 tsp
olive oil, extra virgin
orange for garnish (optional)

MARINADE

2 c
chicken stock
1 tsp
honey
1 small
piece of green ginger
1 Tbsp
water
1 Tbsp
brandy
3 tsp
cornstarch

Directions Step-By-Step

Clean the duck well and pat dry.

Prick the skin with a fork and sprinkle with salt and pepper.
Rub duck with soy sauce.
Fry on stove until golden brown on all sides.

Put in dish and bake in 375 F oven for 1 hour, or until done (165 F internal). Remove the duck and keep it hot.

Put marinade ingredients in a pan on stove and bring to the boil

Pour over cooked duck. Serve with slices of oranges and snap peas.
