Duck a l'Orange
For an eye appealing and delicious meal.
1Clean the duck well and dry. Prick the skin with a fork and sprinkle with salt and pepper.
2Place on a roasting pan and roast at 375 F for about 1 hour, or until done (165 F internal) . Remove the duck and keep it hot.
3Remove all but 1 tbsp of fat in the roasting pan. Return to heat and stir in flour. Add orange juice, wine, and orange caracao.
Stir until sauce thickens and remove from heat. season to taste.
4Pour sauce over the duck and garnish with orange slices and parsley.
