Ingredients For duck a l'orange

  • 1
    whole duck (4-5 lbs)
  • 2 Tbsp
    red wine
  • 2 Tbsp
    dry orange caracao
  • 1/2 oz
    flour
  • rind and juice of 3 oranges
  • salt and pepper
  • garnish: parsley and orange slices

How To Make duck a l'orange

    Clean the duck well and dry. Prick the skin with a fork and sprinkle with salt and pepper.

    Place on a roasting pan and roast at 375 F for about 1 hour, or until done (165 F internal) . Remove the duck and keep it hot.

    Remove all but 1 tbsp of fat in the roasting pan. Return to heat and stir in flour. Add orange juice, wine, and orange caracao. Stir until sauce thickens and remove from heat. season to taste.

    Pour sauce over the duck and garnish with orange slices and parsley.
