Ingredients For turkey reuben wraps

  • 2 c
    shredded cabbage
  • 1 c
    shredded carrots
  • 1/2 c
    thousand island salad dressing (reduced fat, if available)
  • 3 Tbsp
    cider vinegar
  • 4
    10 inch whole wheat tortillas
  • 1/4 c
    thousand island salad dressing (optional) (reduced fat, if available)
  • lettuce or spinach leaves, for 4 sandwiches
  • 12 oz
    sliced deli turkey, turkey corned beef, or turkey pastrami
  • 8
    thin slices of swiss cheese

How To Make turkey reuben wraps

    Combine first 4 ingredients, in a large bowl. Spread each tortilla with 1 Tb. of the dressing (optional). Line each tortilla with one large lettuce leaf, a couple of medium size leaves, or several spinach leaves. Arrange 3 ounces of turkey meat, down the center of the lettuce. Place 2 cheese slices, on top of turkey. Top with 3/4 cup of the cabbage mixture.

    Fold the bottom of the tortilla, tightly over the filling, then fold in the left and right sides. Roll the wrap, up to the top edge, forming a cylinder. Repeat with remaining ingredients. Wrap in plastic wrap, or paper sandwich wrappers. Store in the refrigerator, until serving. Before serving, cut each wrap in half, across the middle with a slightly diagonal cut. Makes 4 servings.
