I was recently told that my triglycerides were high and I should change my eating habits. Bad news for a foodie like me, but I'm attempting to do what I have to do. Here's my first major change: Turkey instead of beef chili. Hope you enjoy!

Ingredients

1 1/4 lb
ground turkey
1 pkg
sweet turkey italian sausage
1 pkg
mushrooms
1
bell pepper
2 medium
onions
1 can(s)
stewed tomatoes, mexican
2 can(s)
chili beans (i like brooks brand) hot
1 pkg
hot chili seasoning
1 pinch
crushed red pepper flakes
2-3
serrano chiles chopped
1 Tbsp
olive oil, extra virgin
1 can(s)
tomato paste
1 1/2 can(s)
water if you like it less thick. use tomato paste can
6 Tbsp
ketchup
1 pkg
cheese, shredded (your choice) i use colby jack
1
sour cream

Step-By-Step

1Chop bell peppers, onions, Serrano peppers. Slice mushrooms if you purchased caps.
2Add olive oil to dutch oven or skillet. Heat oil and add veggies. I add my peppers as well but some may want to add later if not use to working with peppers.
3Once veggies are soft about 5 mins, add ground turkey and turkey Italian sausage. I buy the links and push the meat from both ends of the casing. Chop with a spatula to break up the meat. Brown until no longer pink
4The mushrooms will create liquid so drain entire pot once meat is brown. Return to pot.
5Add 1 chili seasoning packet. Stir. Add tomato sauce and 1 1/2 can water. Stir. Add one can of beans and stewed tomatoes. Stir. Add last pack of chili seasoning and chilies if not already. Stir. Add ketchup. Stir.
6Heat to boiling. Stir then immediately lower heat to medium and let simmer for about 45 minutes.
7Top with shredded cheese and sour cream. I also serve my chili with tortillas.
