- refried beans
- oil to fry tortillas
- any toppings you like, cheese, jalapeno, tomato, onion, cilantro, sour cream, lettuce
1peel and dice the potatoes and carrots and put in a pot to boil. I add some garlic powder , adobo powder and sazon to flavor it. when potatoes and carrots are tender , drain, set aside with the rest of your toppings.
2in a fry pan, heat some oil and then fry the tortillas on both sides till crisp and then drain in a basket on paper towels.
3heat the refried beans, spread some beans on the tortilla, sprinkle with cheese and top with a couple spoonfuls of potatoes and carrots and any other toppings you like. enjoy.
