Shrimp with Tomato and Feta

- 5-6 medium
- 8-10 oz
- 1-2 tsp
- minced garlic
- 1/4 c
- low fat feta
- lemon juice,salt pepper,basil
- 1-2 Tbsp
- olive oil
1For all the ingredients change quantity depending on your personal tastes. It still ends up delicious.
2Heat 1 tbsp. olive oil in skillet. Add 1-2 tsp. minced garlic (to taste) sauté for 1 minute. Add chopped tomatoes. Sauté till tomatoes just heated. Season to taste with salt pepper and basil. Add shrimp. Cook 4-5 minutes.
3Put mixture in individual oven safe dishes. Sprinkle with lemon juice and pepper. Top with feta cheese. Bake 15 - 20 minutes at 350.
4Serve with multigrain or wholewheat bread to sop up the juices. No oils or butter needed on the bread. Just dip in the juices that your fork can't pick up.
