6-inch (3-ounce) pita bread
1 1/2 Tbsp
butter, softened
2 1/2 oz
(generous 1/4 cup) plain or flavored prepared hummus
5 oz
grilled (or roasted) sliced vegetables, such as bell peppers, zucchini, mushrooms, eggplant, onions and rapini
1/2 oz
(about 1/3 cup) spinach
2 oz
queso fresco cheese, sliced

Directions Step-By-Step

Split pita crosswise so you have 2 circular pieces Butter outsides of both pieces. Spread hummus on unbuttered side of both pieces. Place 1 circular half hummus-side-up on panini grill. Top with grilled vegetables, spinach and queso fresco. Carefully cover with remaining pita half, hummus-side down, and press (or grill) until sandwich is heated through. Cut in halves or quarters to serve.
