I just love Rueben sandwiches, and nothing taste better than a homemade one. See my other recipes for a good recipe for 1000 island dressing. When I made a meal I like everything possible to me totally homemade!

Ingredients

1 1/2 lb
thinly sliced corned beef
8 slice
swiss cheese
1 jar(s)
sauerkraut
8 slice
dark rye bread or marbled rye bread
1 c
1000 island dressing
6 Tbsp
butter, melted

If preparing your own corn beef, you will want to slow cook a 3 pound flat cut corned brisket in a dark stout beer, one bottle will be more than enough. It gives your corn beef a wonderful flavor. If you cook your own corn beef you will want to completely chill it so you can slice it thin. I cook my corn beef a couple days before I plan on using it.

Grill or heat up your corn beef before assembling your sandwiches.

To assemble your Rueben, lay out your rye bread and brush one side of each slice with butter. Turn over bread and spread both pieces of the bread with a layer of 1000 island dressing. Lay a piece of Swiss cheese on each piece of bread, than put desired amount of corn beef on one of the slices of bread, followed by about 1/3 to 1/2 cup sauerkraut. Put other slice of bread and cheese on top and grill till golden brown on either side. Be very careful not to over cook, you don't want to burn your sandwich. Now cut in half, serve and enjoy!
