Place pork chops in a large plastic bag or sealable container. Zest lime from 2 limes and reserve. Squeeze juice from all 3 limes and combine with remaining ingredients and pour over chops. Seal and refrigerate 3 hours or overnight, turning chops occasionally.
Preheat grill to medium heat. Remove chops from marinade and discard marinade. Place chops on grill, close lid and cook 6-8 minutes per side.
Top with grated lime zest. Serve with grilled sweet potato wedges and a nice salad.
