TASTY SAUSAGE & RICE CASSEROLE

I was running low on ingredients to make for dinner so I Googled what I had and came up with this dish, which I have tweaked a bit to include a couple of other things I had on hand. Very simple and very tasty!

Ingredients

3 c
cooked basmati rice (or any type of rice you prefer)
1 lb
pork or beef sausage
1 clove
garlic, minced
1 small
onion, chopped or 2 tsp. minced onion
2 c
v-8 juice

Directions Step-By-Step

Cook rice as directed on package; set aside.

If sausage comes in links, cut into bite-size pieces. In a large skillet, brown the sausage, stirring constantly to keep separated into pieces. Remove sausage and keep warm.

Saute onion in the same pan; add garlic when onion is almost translucent and cook 1 minute more. Drain off the fat; add cooked rice and sausage and mix thoroughly.

Place the mixture into a 2-qt. casserole dish; cover with V-8.

Cover and bake in a preheated 350ยบ oven for 40 minutes.
