My Dad loved this recipe. Originally Mom had this large needle that she threaded string through and she sewed the ribs closed. That was time consuming and pretty funny! The sour kraut has a different taste after cooking between the pork ribs. The ribs are falling off the bone after cooking so long. This is a very good meal for a Sunday Dinner.
Fry the sour kraut with the onions and pepper till a little brown.
Stuff the 2 pork ribs with the sour kraut between them. Take string and tie around ribs to keep them together.
Set oven to 350 degrees. Put ribs in a roaster or what ever oven proof pan you use. Cover with foil from the beginning. The last 20 to 25 mins. remove cover and pour on Open Pit Barbeque sauce. Cook for a total of 2 1/2 hours
