This is one of "our" earliest recipes. It's elegance, ease of prep, and earthy flavors made it an instant favorite in our house. We found it in the Most Expensive Cookbook in the World (Great American Recipes card set).

Ingredients For sausage cacciatore

    italian or pork sausages
  • 2 Tbsp
    oil
  • 1 md
    onion, chopped
  • 1
    green or red pepper, chopped
  • 2 lg
    sprigs parsley, chopped
  • 15 oz
    tomato sauce
  • 1/2 c
    white wine, optional
  • 1 lg
    clove garlic, minced
  • 1 tsp
    dried oregano leaves
  • 1
    bay leaf
  • salt and pepper, to taste

How To Make sausage cacciatore

    Heat the oil in a large skillet. When the oil is hot, brown the sausage all around. Remove sausage and set aside.

    Add the onion and green pepper to the pan and saute for 3 minutes.

    Add tomato sauce, white wine, garlic, parsley, oregano and bay leaf. Stir to mix well. Place sausage in pan. Stir to mix well again. Cover.

    Simmer over low heat for about 30 minutes or until the sausages are cooked.

    Salt and pepper to taste.
