Pork Chops with Herb Stuffing

4 (cut the chops in half- it's more that enough for a serving)
pork chops, center cut
chicken broth, low salt
paprika, sweet mild
Cut a "pocket" into each chop with a very sharp pointed knife
Lightly salt & pepper each chop, set aside
Mix 1 tbsp. butter and broth in a saucepan, bring to medium heat
Turn heat to low; add onion, celery, stuffing mix & spices, stir with a wooden spoon to make stuffing
Insert stuffing into the pockets of the chops, secure with baker's twine and toothpicks
Brown chops in sauté pan with the other tbsp. of butter
Place in a greased covered casserole dish, bake at 350 degrees for 45 minutes.
Remove toothpicks & twine and enjoy!
