Ingredients For pan coucous with chorizo and green beans

  • 1 Tbsp
    olive oil
  • 1
    red onion, sliced
  • 2 clove
    garlic
  • 1
    long red chilli, sliced
  • 2
    chorizo sausages, sliced
  • 14oz can
    tomatoes chopped
  • 2 c
    chicken stock
  • 5 oz
    green beans, fresh, sliced
  • 1 1/4 c
    couscous
  • 1 c
    cilantro, fresh

How To Make pan coucous with chorizo and green beans

    Heat a non-stick frying pan over medium heat. Add the oil, onion, garlic, chilli and chorizo and cook for 1-2 minutes.

    Add the tomatoes, stock and beans and sprinkle over the couscous. Cover with a lid, reduce heat to low and simmer for 5 minutes or until the liquid is absorbed.
  • 3
    Top with the coriander to serve
