Meatloaf with Vodka Sauce

When I saw Carol Perricone's recipe for Homemade Vodka Sauce, this idea for an Italian meatloaf popped into my mind. I've used my basic meatloaf recipe, with Italian-inspired ingredients. Your dinner guests will want plenty of sauce, so whatever doesn't fit onto the meatloaf platter you can put in a gravy boat and pass with a large ladle!

lean ground beef
1/2 lb
ground pork
1/2 c
grated parmesan cheese
1 Tbsp
dried basil
6 oz
tomato paste
1/4 c
heavy cream
eggs, beaten
1 tsp
each salt and pepper
1 1/2 c
fresh breadcrumbs

1Prepare the Homemade Vodka Sauce. Keep warm.
Make breadcrumbs by buzzing about 3 slices of Italian bread (or your choice) in a food processor or blender. Set aside.
2Have all ingredients at room temperature. In a large mixing bowl, combine ground meats, parmesan cheese, basil, tomato paste, cream, eggs, and salt & pepper. Gently fold in breadcrumbs. Mix until uniform.
3Turn mixture into a greased tube pan or Bundt pan. Bake at 350°F for 1 hour. Allow to cool in pan 10 minutes, then turn out on a serving platter with a high rim (to catch the vodka sauce). Pour the hot vodka sauce over the meatloaf, filling up the middle of the meatloaf.
