I fell in love with gyros about 28 years ago while visiting my sister Pam in Richmond Va. I've made them before, but I think I've finally perfected the perfect blend of meats and spices to suite my palate. This is a winner and keeper. This was so much better than what I've had at restaurants. Cooking with Love & Passion. sw :)

Ingredients

GYRO MEAT

1 lb
ground lamb
1/2 lb
ground sirloin
1/2 lb
ground pork
1 medium
onion, grated
5
garlic cloves, grated
2 Tbsp
mint, fresh & chopped
1 Tbsp
greek herbs- oregano, cumin, parsley
lemon zest, grated
2 tsp
smoked sea salt
1 tsp
red pepper flakes
1/2 tsp
cracked black pepper
2 Tbsp
olive oil, extra virgin

CUCUMBER FETA YOGURT SAUCE

16 oz
greek whole milk yogurt
3 oz
feta cheese, crumnbled
1
english cucumber, grated and drained
2-3
garlic cloves, grated
juice from 1 lemon
1 Tbsp
dill, fresh & chopped
1/2 Tbsp
italian parsley, chopped
smoked sea salt & cracked black pepper to taste

OTHER INGREDIENTS

flat bread, lettuce, tomatoes, onions

Directions Step-By-Step

In a medium bowl, combine all the gyro meat ingredients.

**Meanwhile, combine Cucumber Feta & Yogurt Sauce ingredients together in a small mixing bowl. Cover & refrigerate**

Mix gyro meat ingredients with a mixer until all the seasoning are evenly distributed and the gyro meat mixture is pasty and slightly sticky.

With oiled hands, form gyro meat mixture into a log and place on a oiled sheet pan. Cover and refrigerate for at least 2 hours.

Bake in a 325 degree preheated oven for 45-50 minutes, until log is firm and cooked through.

Slice gyro in strips, onions & tomatoes. Warm flat bread on grill pan or in microwave.

Build you gyro: flat bread, sauce, lettuce, gyro slices, tomato, onions and top with more sauce. Wrap in aluminum foil and serve
