easy ham & cheese frittata

With this easy and filling dish, you can use either deli ham or left-over ham. I tend to use the left-over ham from Christmas that I freeze.

Ingredients For easy ham & cheese frittata

  • 2 Tbsp
    canola or vegetable oil
  • 6
    eggs
  • 1/4 lb
    sliced ham, cut into strips
  • 1/4 c
    shredded mozzarella cheese, i used reduced fat
  • 1/2 tsp
    chopped chives
  • 1/2 tsp
    chopped parsley
  • salt & pepper to taste

How To Make easy ham & cheese frittata

    Heat oven to 425. In lg bowl,whisk the eggs together. Heat oil in lg cast-iron skillet over medium heat.

    Pour eggs into pan. Layer w/ ham, cheese, a pinch of salt, a pinch of pepper and the herbs. Cook 5 mins. Transfer to oven and bake 10 mins, or until eggs are set.
