1Preheat oven to 375 degrees.
In an ovenproof skillet or dutch oven , stir butter and honey over medium heat, until butter is melted.
2Remove any silver skin from the loin.
3Liberally sprinkle loin with cayenne pepper, Cajun seasoning and pepper.
4Brown each side of the loin for about 5 minutes in the honey butter. Making sure not to burn the honey.
Lower the heat if honey begins to burn.
5Now, place the skillet in the oven, uncovered for 25 - 30 minutes or until pork is no longer pink. Do not over cook.
6When the loin is finished; remove to a serving platter, cover with foil and let rest while you cook down the remaining honey/butter sauce.
7In the same pan, add the water, scraping the bottom of pan to get any browned bits loosened.
Simmer for about 5 minutes, until sauce is reduced and thickening. ( sauce will be an auburn color )
8Now, slice your pork, and drizzle with the sauce.
