WANTED TO MAKE SOMETHING SPECIAL FOR DINNER TONITE FOR ME N THE HUSBAND N I HAD SHRIMP n PASTA BUT DIDNT WANT SCAMPI SOOOO THIS PASTA BAKE WAS MADE....N ENJOYD :)

curly pasta, uncookd ... i used fusilli. but rotini or rotelle would b ok
16 medium
shrimp, cookd (if using raw shrimp just put in with straind pasta once cookd)
1 Tbsp
butter
1 medium
shallot, finely chpd. (onion can b used)
1 1/2 c
ricotta
1/3 c
heavy cream
1 box
frozen chopd spinach, defrostd n squeezd. dry
3/4 c
parmesan cheese, divided
1/2 tsp
salt
1/2 tsp
lemon /pepper
2 Tbsp
parsley, chopd

Directions Step-By-Step

IN A SMALL PAN MELT BUTTER N SAUTÉ SHALLOTS FOR 2 -3 MINUTES...U CAN ADD A PINCH OF RED PEPPER FLAKES IF U WANT (IF I HAD SOME WHITE WINE I WOULDV ADDED A SPLASH AT THIS POINT BUT I DIDNT...NEXT TIME FOR SURE) :(. N THEN SET ASIDE.

MAKE PASTA ALDENTE N DRAIN n ADD SHRIMP ( IF USING RAW SHRIMP IT WILL COOK SLIGHTLY AT THIS POINT)...SET ASIDE.

PREHEAT OVEN TO 450 IN A LARGE BOWL MIX TOGETHER PASTA n SHRIMP, SPINACH, SAUTED SHALLOTS, RICOTTA, CREAM, 1/2 CUP OF PARM CHEESE, LEMON PEPPER, SALT, CHPD PARSLEY.

SPOON MIXTURE INTO SMALL CASSEROLE DISH...I USED 2 SMALL ONES (FOR HUBBY N MYSELF)...SPRINKLE ON EXTRA PARMESAN CHEESE N BAKE FOR 10 MINUTES.
