Ingredients

3 medium
tomatoes (about 18 ounces), cut into 1/2" dice
1 small
red onion, chopped
1 tsp
fresh lemon zest
1/2 tsp
salt
1/2 tsp
freshly ground pepper
1 c
crumbled feta cheese
8 oz
low carb fettuccini pasta

Directions Step-By-Step

In a medium bowl combine tomatoes,onion,zest, salt,and pepper. Let sit at room temperature at least 30 minutes. Cook pasta according to package direction. Drain and toss with tomato mixture. Sprinkle with feta. Serve warm or at room temperature.
