Cook the pasta according to the directions,strain and reserve,also reserve one cup of the pasta water.
Saute the shallots in a non stick fry pan in a tablespoon of olive oil until lightly browned. Toss the cut vegetables in the lemon dressing.Add to the pasta and toss together to combine.
Add the melted butter and the grated cheese,roasted garlic and toss to combine.If you need to add the pasta water now you can add a little a a time to moisten the pasta if needed.Place in serving dish and garnish with more grated cheese if desired.
Clean and chop all of the salad ingredients,toss with the dressing and sprinkle with feta cheese. Serve side by side with some crusty bread and butter,enjoy!!! :)
