This recipe is slight variation on my mother's beef and noodles. I usually make this in the slow cooker, but it can be made on the stove-top instead--just a matter of preference. My family really loves this, maybe even more than chicken and noodles.
Trim any fat from beef and cut into small cubes. Place oil in large pot or Dutch oven and heat over medium-high heat. Add beef cubes and brown slightly, stirring frequently. Drain beef on paper towels; then place in 4- to 5-quart slow cooker.
Dissolve beef bouillon cubes in about 4 cups boiling water; pour over beef. Add seasonings and stir.
Stir in noodles. Make sure there is enough liquid to cover--it will cook down. Cook on HIGH just until mixture begins to boil. Reduce to LOW setting and cook, covered, for 7-8 hours, or until beef is fork-tender.
NOTE: You can also make this in a Dutch oven on the stovetop with the same directions, except cooking time. Simmer on low heat for about two hours.
