Ingredients For easy zucchini n tomato pasta

  • 2 lg
    zucchini, cut into 1/2 moons...if too large cut into 1/4
  • 3/4 c
    tomato, chopd
  • 3 lg
    garlic cloves , chopd
  • 1/8 c
    olive oil
  • 1/2 tsp
    crushd red pepper ....more or less or none...ur choice ;)
  • 1 Tbsp
    flour
  • 1 tsp
    salt
  • 1/2 tsp
    blk pepper
  • 1 1/2 c
    beef broth ....i usually use chicken but beef was opend in the fridge ;)
  • 5 lg
    basil leaves, torn
  • 1 Tbsp
    fresh parsley, chopd
  • 1 lb
    pasta....i used penne
  • 1/4 c
    parmesan cheese...plus more for table

How To Make easy zucchini n tomato pasta

    ONCE ZUCCHINI HAS BEEN CUT INTO 1/4 SHAPED MOONS THEN HEAT OLIVE OIL IN LARGE PAN.

    ADD ZUCCHINI TO PAN CAREFULLY N TURN ZUCCHINI AFTER 3 MINUTES LET BROWN SLIGHTLY N TURN ONCE MORE N ADD CHOPD GARLIC N CRUSHD RED PEPPER THEN COOK FOR FIVE MORE MIN.

    ADD TOMATOES N LET COOK FOR 2 MIN THEN ADD S n P AND FLOUR. STIR GENTLY UNTIL COMBIND.

    MAKE PASTA AT THIS TIME ;) ......... ADD BEEF BROTH, PARSLEY N TORN BASIL...... COVER N REDUCE HEAT THEN SIMMER FOR 10 MINUTES.

    STIR IN 1/4 CUP OF PARMESAN CHEESE

    COMBINE ZUCCHINI MIXTURE TO COOKD PASTA .....ENJOY :)
