Creamy spaghetti w/ zucchini

A wonderfully light spaghetti dish w/ spring zucchini.

Ingredients

1 lb
spaghetti
3 Tbsp
olive oil
1 large
zucchini, washed
1/2 c
basil leaves, cut into ribbons
1/2 lb
low-fat ricotta cheese

Step-By-Step

1Cook pasta as directed, reserve 1/4 cup water, drain remaining water, replace pasta into pot. Using a shredder, shred zucchini. Heat oil in lg skillet over medium heat.
2Add zucchini and a pinch of salt. Stir to coat w/ oil. Cook, stirring for 4 mins. Add spaghetti and ricotta to skillet. Toss gently to combine.
3If it is too sticky, add a little of the reserved water. Season w/ salt and pepper.
