One Skillet Smoked Sausage and Squash

You can prepare the vegetables in advance, makes it a lot easier if you do.

1 medium
zuccini cubed
2 medium
yellow squash cubed
3 c
butternut squash cubed
1 pkg
sliced baby bella mushrooms
1 stick
butter (you can use margarine)
1 medium
onion cut into chunks
1 medium
green bell pepper cut into chunks
1 pkg
petite baby carrots
1 pkg
smoked sausage sliced ( can turkey sausage)
2 Tbsp
minced garlic


1Melt the stick of butter over medium heat in a large skillet.
2Add carrots first because they take longer to cook, cook for 5 minutes over medium heat stirring often.
3Add the remaining vegetables and minced garlic stir together.
4Cook the vegetable until tender. Add the sausage and heat throughly.
5Do not cover the skillet. The moisture from the squash will not cook off.
