A spicy combination of vegetables cooked with bulgur and sweetened with raisins. This is a very delicious light vegetarian meal.

Ingredients For moroccan spiced sweet potato medley

  • 2 tsp
    olive oil, extra virgin
  • 1 md
    onion, sliced
  • 2 clove
    garlic
  • 1 1/2 tsp
    ground cumin
  • 1/4 tsp
    ground red pepper (cayenne)
  • 1 lg
    sweet potato, peeled and cut into pieces
  • 1 c
    bulgur (cracked wheat)
  • 1 can
    stewed tomatoes
  • 1 can
    garbanzo beans, rinsed and drained
  • 1 can
    black beans, rinsed and drained
  • 1/2 c
    dark seedless raisins

How To Make moroccan spiced sweet potato medley

    In nonstick 12 inch skillet, heat oil over medium heat until hot. Add onion and cook, covered, about 8 minutes or until tender and golden. Stirring occasionally.

    Add garlic, cumin and ground red pepper. Cook 1 minute, stirring.

    Add potatoes, tomatoes, bulgur and 2 1/4 cups water. Heat to boiling over medium-high heat. Reduce heat to medium-low; cover and simmer about 20 minutes or until potatoes are fork tender.

    Stir in beans, and raisins. Heat through.
