Beans are really cheap and feed a lot of people. Sundays around my house means lots of friends and family stopping by and expecting something to eat. There is always something on the grill, some sort of salad and a pot of beans on the stove.

Ingredients For carrie's pintos

  • 2 lb
    bacon, chopped
  • 1 lg
    package pinto beans
  • 2 Tbsp
    chili powder
  • 1 lg
    bell pepper, chopped (any color)
  • 1 lg
    onion, chopped

How To Make carrie's pintos

    Fry the bacon in a large Dutch oven or stock pot until crisp. Leave in pot and fill 1/2 full with warm water.

    Add beans and the rest of the ingredients and let soak for 1 hour.

    Boil on high for 30 to 45 minutes, adding warm water as needed to keep the pot 1/2 full.

    Turn to medium heat and continue cooking until beans are tender, about 1 hour.
