Ingredients

1/2 lb
boneless, skinless, cooked chicken
1 c
plain yogurt
1/2 c
dijon mustard
1 1/2 Tbsp
curry powder
1/2 Tbsp
ground cumin
1/2 tsp
cayenne pepper
1/2 c
raisins
dash dash(es)
kosher salt, fresh ground black pepper
1/2 c
cashews, unsalted
1 pkg
salad greens

Step-By-Step

1Cut chicken into small cubes and set aside.
2In a large bowl, combine yogurt, mustard, curry powder, cumin, and cayenne pepper. Add the cubed chicken and raisins. Season with salt, pepper and more cayenne, if desired.
3Mix in the cashews right before serving so they stay crunchy. Serve as a sandwich on bread or on a bed of lettuce as a salad.
