All measurements are approximate as I don't measure anything unless I am baking... LOL! I served this over creamy parmesan rice with a side of fresh steamed green beans and homemade drop biscuits. My husband-to-be absolutely loved it.

Ingredients For tilapia tuscany
- SAUCE:

1 Tbspolive oil

1 Tbspfresh garlic, minced
-
1 smred onion, chopped fine
-
3/4 cwhite wine (optional)

1/4 cchicken broth (if omitting wine, use a full cup)

2 Tbspcapers
-
7 ozlarge pitted black olives, halved & sliced (can use green olives, too, or a combination of both)

8 oztomatoes, canned italian-style and diced
-
1 1/2 tsplemon-pepper seasoning, or use 1/8 cup lemon juice

1 Tbspfreeze-dried italian herb blend seasoning, i use litehouse brand
- TILAPIA:

2 Tbspolive oil
-
1 Tbspbutter
-
4tilapia fillets
-
1 tsplemon-pepper seasoning, to taste
How To Make tilapia tuscany

1Make the sauce:
-
2Heat olive oil in a 10" skillet over medium-high heat. Add garic & red onion, cook until soft and lightly browned, about 2-3 mins

3Add white wine to skillet. Once the flames have died out, reduce heat to medium.

4Add remaining sauce ingredients to skillet. Bring to a boil, reduce heat to med-low and allow to gently simmer until you're finished preparing and frying the tilapia, approx. 15 mins. If the sauce get too thick, add more wine or chicken stock.

5Cook the Tilapia:

6Sprinkle both sides of the tilapia filets with lemon-pepper seasoning and kosher salt to taste.

7Combine olive oil and butter in a large skillet over med-high heat.

8Pan-fry seasoned tilapia filets in oil mixture, turning once, until opaque and fish flakes easily with a fork. (about 5 minutes each side, depending on thickness of filet)

9Top each tilapia filet with a spoonful of the sauce and enjoy!
