In a large mixing bowl, add all ingredients, except fish, 1 by 1 while steadily mixing until smooth.
Cut fish into the serving sizes that suits you. I prefer 4" fillets.
Lightly grease the bottom of a baking sheet with virgin olive oil.
Dip the fillets into the Dijon mixture and place on baking sheet. Pour leftover mixture on top of fillets.
Bake for aproxamitly 20 minutes or until fish flakes when cut with a fork.
