You can also use two boxes of jiffy corn muffin mix in place of flour and meal. This was my husband's grandmother's recipe and before making it this way, my kids wouldn't eat it. Now all will but one.

Ingredients

6 can(s)
pink salmon
6 large
eggs
1 medium
onion (diced)
1 1/2 c
flour
1 1/2 c
corn meal
salt,pepper and garlic salt to taste

Step-By-Step

1Drain and De-bone salmon. (Note: you only have to take out the vertebrae, the other bones will cook away.
2Mix all ingredients together thoroughly.
3Fill bottom of skillet with a thin layer of cooking oil.
4Patty up the fish thinly. Fry until golden brown. Make sure you use as little oil as possible so patties won't be greasy.
