Ingredients

1/2 c
unsalted butter, softened
1/3 c
pecans, finely chopped
1 Tbsp
flat-leaf parsley, chopped
1 Tbsp
fresh lemon zest
1 tsp
fresh lemon juice
2 tsp
fresh ginger, grated
1/4 tsp
salt
1/4 tsp
freshly ground black pepper
4
salmon steaks (6-oz each)
1 Tbsp
pecan oil or oil of your choice
1 tsp
salt
1 tsp
black pepper

Step-By-Step

1In a small mixing bowl, combine the pecan butter ingredients (butter through 1/4 tsp. black pepper); beat until well blended. Set aside.
2Rub salmon with oil and season with salt and pepper. Grill, broil or pan-sear for 4-5 minutes on each side or until salmon is cooked to desired doneness. Transfer to dinner plates or a serving platter. Top each with a dollop of pecan butter. Pass the remaining butter.
