I like my catfish spicy, so I use a Tbsp. of cayenne. You can adjust yours to fit your tastes.

Ingredients

6
catfish filets
1/2 c
flour
1/2 c
corn meal
cayenne pepper, to taste
2
eggs, beaten
oil

Step-By-Step

1In a shallow pan, mix flour, corn meal and cayenne pepper very well.
2Dip filets in the egg.
3Then dredge in the flour mixture to coat.
4Heat oil in a skillet or deep fryer. Use enough oil to cover the fish.
5Cook until fish is done and flakes easily, Be sure not to crown the filets when frying.
