I like my catfish spicy, so I use a Tbsp. of cayenne. You can adjust yours to fit your tastes.

Ingredients

catfish filets
1/2 c
flour
1/2 c
corn meal
cayenne pepper, to taste

eggs, beaten
oil

Directions Step-By-Step

In a shallow pan, mix flour, corn meal and cayenne pepper very well.

Dip filets in the egg.

Then dredge in the flour mixture to coat.

Heat oil in a skillet or deep fryer. Use enough oil to cover the fish.

Cook until fish is done and flakes easily, Be sure not to crown the filets when frying.
