Clean Eating-Orange Roughy w/ Cilantro Sauce

It's the start of a new year, and I've tried a number of way to eat healthier. I'm just not finding recipes that make me say WOW. Well, after much disapointment in myself for "failing juicing", I want A nice meal for the evening. I also want to stick to Clean Eating. I thought of this out of desperation. So let's give it a go.

Ingredients

2 medium
orange roughy filets
pinch
kosher salt or sea salt
pinch
white pepper
dash(es)
garlic powder
pinch
ground cumin
olive oil sray to coat foil

FOR SAUCE

YOU WILL NEED A BLENDER

1 bunch
cilantro, fresh with stims (ends cut off)
1/2 c
yogurt, greek low-fat, plain
1/2
lemon juice
1/4 tsp
garlic powder
2
green onion
1/8 c
olive oil
salt and pepper
dash(es)
cayenne pepper to taste

PREHEAT OVEN AT 325 DEGREES F

Step-By-Step

1In a medium piece of foil coat with nonstick spray .
2Place your fish side by side, and season to your taste with spices.
*(white pepper is spicer the black pepper)
3Make a foil pocket to cook fish.
Bring both side together, and roll downward until sealed. now do the same with each end.
4Now do the same with each end. Press to seal. Place in sturdy pan, and place in oven.
5TIME TO MAKE THE SAUCE !

In a blender or bullet, load all ingredients in. Blend well
TASTE.........make adjustments Bleand and TASTE AGAIN
Keep at room temp. for now..
6After 15min. remove fish from oven, DO NOT OPEN FOIL FOR 5 MIN.
7After 5 min. OPEN and slather one sauce, You know you want more. Serve over a bed of Quinoa
