Tracy's Nashville Hot Chicken

Hot Chicken is not the same thing as Spicy chicken or Buffalo chicken. It is original to Nashville, TN USA and pretty unique to this area. We even have an annual Hot Chicken Festival to celebrate and compete with our individual recipes.

It is definitely a Food Challenge item.

Oh yeah..if you're going to try this, don't go far or travel for at least 20 minutes. If you manage to make it through a serving, it is notorious for leaving you quickly.

Ingredients

MARINADE

buttermilk + pickle juice + cajun seasoning & cayenne

PASTE

4 Tbsp
lard
2 Tbsp
cajun seasoning
6 Tbsp
cayenne pepper
6 pinch
sugar

self-rising flour for frying

chicken breasts

serve with pickles and on top of a slice of white bread

Directions Step-By-Step

Presoak the chicken in buttermilk,pickle juice and spices.

Roll chicken in flour and fry it.

Microwave the lard for about 30 seconds then mix all of the ingredients for the paste

Apply it evenly to the fried chicken using either a basting brush or latex glove-protected hands.

**use about a teaspoonful of paste for each side of each chicken breast.

Serve on top of a slice of white bread with pickles.
