Too too hot today, but I threw this bird in the oven for 40 minutes on 500, seasoned down. While this flash cooked, I did onions, garlic, mushrooms, a little cornstarch. Pulled the hot chicken outta the oven and hit it with Longhorn steakhouse seasonings and butter.a combination of sweet peas, carrots, and bacon, pecan brown rice, and buttermilk biscuits...oh to love your family, good eating. Sorry but my boys ate before I could take pictures.

    roasting hen,3 1/2- 4lbs
  • 4 Tbsp
    onion powder
  • 4
    longhorn grill seasonings
  • salt and pepper, to taste
  • paprika, sweet mild
  • FOR THE THIN GRAVY
  • 2 md
    yellow onions
  • 2 Tbsp
    minced garlic
  • 1 pt
    button mushroom
  • 4 c
    chicken stock
  • 1/ 2 stick
    butter
  • 1 Tbsp
    cornstarch, dissolved in 1 cup of the stock

How To Make thin gravy smothered chicken

    Clean your hen,inside and out. Be generous with the seasonings.Season with ingredients above, roast on 500 degrees, 40 minutes to 1 hour, make sure it's sealed tightly.I sealed my roaster with foil.

    Remove from the oven, place into a skillet with 2 onions, 2 tablespoons of minced garlic,1 pint of button mushrooms, and 1 tablespoon of cornstarch to a cup of the chicken stock.

    Simmer hard 10 minutes, let sit 15 minutes to slightly thickened sauce. Serve hot.

    NOTE:THE THIN GRAVY SHOULD BE ON A SLOW SIMMER WHILE THE CHICKEN IS ROASTING.
