1Cut up chicken into bite size pieces.
Put enough olive oil and sesame oil (opt) to coat bottom of fry pan and add chicken pieces. Sprinkle with garlic powder, and cook the chicken over medium heat,till almost done.
2While chicken is cooking, gather ingredients for the sauce. Cut up sweet peppers, onion, carrot.
3Sauce: Add to a medium bowl the ingredients for the sauce..stir after each ingredient.
Pineapple juice, minced garlic, ginger, apple juice, ketchup, vinegar, brown sugar and soy sauce.
Save the corn starch for last.
4Add chopped veggies to chicken and add the drained pineapple. Stir until mixed. Cook slightly.
5Add the sauce, cover and simmer for 20 minutes.
Make your rice now, and it will be ready for dinner.
6Take a small cup and add the cornstarch with 1/3 water. Add cornstarch mixture to simmering chicken, veggies and sauce in pan and stir until thickened.
