Ingredients

3 Tbsp
cornstarch
1 can(s)
chicken broth
1 Tbsp
vegetable oil
1 lb
chicken cut up into 1 inch pieces
1 can(s)
pinapple chunks (8 oz)
1/2 c
brown sugar
1/4 c
vinegar
1/2 c
onion, chunked
1
green pepper, chunked
1
small jar of maraschino cheeries
4 c
hot cooked rice

Step-By-Step

1Mix broth and cornstarch. Set aside.

2Brown chicken in oil. Drain. Set aside. In same pan lightly stir fry pepper and onion. Add pineapple, vinegar, and sugar. Heat to boil, then add cornstarch mixture. Stir until thickened and boils.

3Return chicken and simmer 5 minutes. Add cherries. Serve over rice.
