This is one delicious sandwich...don't take my word for it, try it sometime...another family favorite I threw together awhile back...just now got around to making it again, so decided I'd share...it's too good not to... This can also be enjoyed as low carb without the Ciabatta... Enjoy!

Ingredients For spiced up chicken cordon bleu / spicy garlic mayo

  • 4
    split ciabatta rolls
  • olive
    oil for browning chicken - or could grill - i do in the summer
  • 4
    chicken breasts - about 4 ounces each
  • 4
    sliced deli ham, i buy off the bone ham...delish
  • 4
    slices swiss cheese
  • garlic powder for sprinkling chicken
  • weber kickin chicken seasoning
  • butter
    softened, - for toasting ciabatta
  • lettuce, pickle, sliced onion etc - optional
  • SPICY GARLIC MAYO
  • 1/2 c
    mayonnaise
  • 1 - 2 clove
    garlic, minced
  • 1/2 tsp
    minced garlic in jar - optional
  • 1 tsp
    dried onion flakes
  • 1/4 - 1/2 tsp
    chili powder
  • 1/4 tsp
    cumin
  • salt
    & pepper to taste

How To Make spiced up chicken cordon bleu / spicy garlic mayo

    Mix all ingredients for mayonnaise in a small bowl; refrigerate till ready to use.

    Season prepared chicken breasts with garlic powder and chicken seasoning. ( or whatever seasoning you want to use )

    In a skillet; (I use my cast iron) - over medium heat, add oil for frying chicken breasts. Get nice and hot, then add the breasts. Cook on one side for about 5 minutes. Flip and cook other side for another 5 - 10 minutes or until juices run clear.

    While chicken is cooking; turn on broiler. Butter both sides of Ciabatta. Place on baking sheet and broil until starts to brown.

    When chicken is finished. Place a breast on each bottom half of bread. Add to each a slice of ham and cheese. Place back under broiler until cheese starts browning and bubbling. About 5 minutes. Or - in skillet you fried the chicken in; add the ham slice and cheese to each breast. Sprinkle some water in edge of pan - cover and steam to melt cheese.

    Take from oven, slather top of bun with garlic mayonnaise. Can add lettuce, onion, etc. Your choice. Enjoy!
